Cava is a sparkling wine that is characterized by its second fermentation and aging take place in the bottle, allowing it to acquire the bubbles (carbon dioxide) in a natural way.
PRODUCTION AREAS
The "Cava Region" consists of a total of 159 municipalities in the provinces of Barcelona (63), Tarragona (52), Lleida (12), Girona (5), La Rioja (18), Álava (3), Zaragoza (2), Navarra (2), Valencia (1) and Badajoz (1), which together make up the production area of Cava, and therefore, are the only ones with full legal capacity to produce this type of sparkling wine and market it under that name.

Cavas are classified according to their sugar content, from the sweet to Brut Nature. The variety is wide, depending on added sugars.

Brut Nature: 0-3 grams per liter.
Extra Brut: up to 6 grams of sugar per liter.
Brut: up to 12 grams.
Extra Dry: 12 to 17 grams of sugar.
Dry: 17 to 32 grams.
Semi Dry: 32 to 50 grams.
Sweet: more than 50 grams of sugar per liter.
WINE TASTING
Young - Gentle, fruity and fresh. Very pleasant in mouth. Slight and tasty thanks to the good balance between sourness (acidity) and aroma richness. The colour straw with greenish sparkles. It makes honor to its singularity and keeps its espirit bright, slight and refresh, which evokes us its origin: the fruit in all its splendor.
Reserva - lively, bright and well-balanced. The Reservas are aged for at least 15 months in the depth and semidarkness of the noiseless underground galeries. This notable aging contributes unmistakable touch of fully ripe fruit. Its pale yellow colour indicates the excelence of the "reservas". It´s the symbol of the tradition and the legacy of the history of Cava. An exquisitness for those with a discerning palate.
Gran Reserve –Is a patience reward. Over 30 months of careful aging in the cellars makes it a unique wine among all, which reserves this special category. Golden pale color with small bubble well integrated, aromas with hints of toast and intense flavor. It is made only in the types bruts and shows a great personality. The Gran Reserve is Cava in its essence.
Rosado - freshness and exuberance. Monastrell, Grenache, Pinot Noir and Trepat. These are the four varieties that give it its unique color. Following the same production method, this Cava is a more aromatic, light and sweet, with a color that evokes to our palate fond memories of red fruits.
